Meat Trakya Usulu Ciger Sarma (TRAKIA STYLE LIVER AND RICE IN SHEEP CAUL)

Recipe Ingredients
INGREDIENT MALZEMELER
1 SHEEP LIVER 1 adet kuzu cigeri
1 SHEEP CAUL 1 adet kuzu iç gömlegi
1/2 CUP RICE 1 çay bardagi pirinç
1 TSP MINT 2 çay kasigi nane
1 MEDIUM ONION 1 adet sogan
1 TBSP OIL 1 yemek kasigi yag
1/2 TBSP TOMATO PASTE 1/2 yemek kasigi salça
1/2 TSP BLACK PEPPER 1 çay kasigi karabiber
1 TBSP SALT 2 çay kasigi tuz



Recipe Directions

Cube the river and soak it in cold water about 1/2 hour. Wash the fat off the sheep caul, place it in a small tray and fill it with hot water, leave it until stuffing is ready. Chop onion small and pan saute it in tablespoon of oil, add small cubed liver and continue to saute for 5 minutes while keep stirring. Add washed rice, stir it couple of times, add 1/2 cup of water and salt, cook until water disapears. Add the mint and black pepper. Cut Caul into 6" squares. Spoon the rice mixture where you can comfortably fold the corners of the caul over. Place them to cooking tray or pyrex, making sure folded corners are at the bottom. Brush, lightly water deluted tomato paste over it. Bake it for 15 minutes in 375 degree preheated oven. Serve hot.

HAZIRLANISI
Kuzu cigerini kusbasi dograyip, kaninin çikmasi için yarim saat kadar suda bekletin. Iç gömlegin yagini yikayip, küçük bir tepsiye koyarak üzerine sicak su dökün, içi hazirlanana dek bir kadarda bekletin. Bu arada ince dogranmis sogani bir kasik yag ile kavurun, üzerine küçük dogranmis ciger parçalarini ilave edin ve bes dakika devamli kanstinlarak kavurun. Daha sonra yikanmis pirinci katin, bir iki defa daha çevrin, bir çay bardagi su ve tuz ilave edip, hafif ateste suyunu çekene dek pisirin. Nane ve karabiber koyup karistin. Kuzu iç gömlegi biçakla, 10-15 santimlik kare seklinde bohçalara bölün. Herbir parçaya, hazirladiginiz cigerli pilavdan alacagi kadar koyup, disari tasmayacak sekilde uçlarini toplayip kapatin. Kapatilan kisimlar alta gelecek sekilde bir cam tepsiye dizin ve üzerine salça sürüp sicak firinda on dakika pisirin. Sicak olarak servis yapin.
