2 cups Scallions
2 cups Parsley
1 tsp Cayenne Pepper
1 tsp Paprika
1 1/2 tsp Salt
1 tbsp Tomato paste
1 tsp Cumin
1/2 tbsp Lemon Juice
1/3 Cup onion
1/4 cup Olive Oil
2 cups red lentil
1 1/4 cups Cracked wheat (Bulgur size #1)
4 cups Water
1 stick Butter
Check the lentils for possible small rocks.
Rinse in a cold water
Boil lentils bring to simmer add salt and paprika at this point
Once the lentils are cooked take ot off the heat and add bulgur, mix, cover let stand for 15 minutes
Saute onions in butter and oil mixture, don't let them change color
Spread the lentil/bulgur mixture in a baking pan and add all other ingredients except parsley and scallions
Pour the oil/butter/onion to the mixture
Mix 1 cup of parsley with 1 cup of scallions and add it to the mixture
Fold everything together paying attention not to mush it.
Form little oval burgers, garnish with scallion and parsley mix.
Cook the lentil in a water, when bubbles apear on the top add bulgur. Turn the heat off and cover the pan. Saute the onion in oil until translucent. Stirring add lentil and bulgur mixture to it. Add rest of the the ingredients and shape them into little meat balls. Serve room tempeture or cold. Garnish with parsley, scallions and red pepper.
